Vatel Restaurant Manila Executive Chef Pierre Cornelis rejoins the grandeur that is Goût de France, an international gourmet festival that celebrates French cuisine across 150 countries each year.
Chef Cornelis has been a part of the De La Salle-College of Saint Benilde School of Hotel, Restaurant and Institution Management (DLS-CSB SHRIM) since 2009. Prior to this, he boasts of an extensive career, having worked in a total of four countries so far.
After graduating from Ecole Hotelier et tourisme de Liege in Belgium, he worked as a chef in a classic gastronomic restaurant in there. He later ventured to the south of France where he worked at dining establishments close to the Mediterranean Sea and Corsica, which allowed him to further enhance his skills in Mediterranean cuisine. He later moved to Montreal, Canada to work with premier hotels like the Westin Montreal and the Hilton. For six years, he was Executive Chef of Le Spa Eastman, a health and wellness resort in Quebec. There, he specialized in healthy cuisine.
Chef Cornelis also wrote a cookbook titled “Le Spa Eastman a Votre table” in 2005. Featuring 100 nutritious recipes, the book had won the gold award for the category of “Best Culinary Cookbook (in French)” at the Cuisine Canada co-organized by the University of Guelph (Ontario) in 2006.
Before he became the executive chef to Vatel Restaurant and a culinary instructor at the DLS-CSB-SHRIM, he also opened the La Regalade in Makati from 2008 to 2009. The French restaurant was recognized by the Philippine Tatler in its list of Best Restaurants in 2009.
